Recipe Friday -- Pumpkin Crumb Cake!
Happy Friday! This recipe came from a special Amish friend who lives in Colorado. I haven't tried it, but it looks easy and yummy! Please let us know if you try it!
Pumpkin Crumb Cake
3/4 c. shortening
2 c. sugar
4 c. flour
Mix together as for crumbs. Save 1/2 cup crumbs for top.
To the rest add:
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 c. sour or buttermilk
1 c. mashed pumpkin
Mix well. May add raisins and nuts. Bake at 350 for 30 minutes or until done.
BETH'S NOTES: I copy these recipes exactly as they've been given to me. This one doesn't say, but obviously the 1/2 cup of reserved crumbs goes on the top prior to baking. Also, I'm wondering if there has to be adjustments to cooking time because of altitude in Colorado.

This sounds really yummy and perfect for fall! The recipe also doesn't say what sort of pan to bake it in. Do you think a bundt pan might work?

Good question! I was thinking a pie pan...but it's a 'cake', so I don't know. Hey...why don't you bake it, then let us all know...LOL!!

Hi Beth , the recipe sounds yummy....will try it.... Can you ask your friend what size pan to bake it in? I also want to try the TOMATO PIE recipe also....have you tried this one ? Is this the first recipe you've sent us ? As for me this is the first one I've received.....Thanks

I can hardly wait to try this. Canadian Thanksgiving is in a couple of weeks, so it will be a perfect snack. I thought that I would bake it in a 11 x13 cake pan.

I have this in the oven. I used a bundt pan. It smells yummy.

This was very good. It took a little longer to bake.

This cake might bake for 30 or so minutes in a 11 x 13 pan, but it will take a lot longer in a bundt or tube pan. Happy baking, ladies.
