Recipe Friday -- Pumpkin Crumb Cake!

Happy Friday!  This recipe came from a special Amish friend who lives in Colorado.  I haven't tried it, but it looks easy and yummy!  Please let us know if you try it! 

Pumpkin Crumb Cake

3/4 c. shortening
2 c. sugar
4 c. flour

Mix together as for crumbs.  Save 1/2 cup crumbs for top.

To the rest add:

2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 c. sour or buttermilk
1 c. mashed pumpkin

Mix well.  May add raisins and nuts.  Bake at 350 for 30 minutes or until done.

BETH'S NOTES:  I copy these recipes exactly as they've been given to me.  This one doesn't say, but obviously the 1/2 cup of reserved crumbs goes on the top prior to baking.  Also, I'm wondering if there has to be adjustments to cooking time because of altitude in Colorado.
