Recipe Friday -- Underground Ham!
Oops...somehow Friday slipped away from me before I posted 'Recipe Friday' -- so, here it is...a little late. I am using this recipe in the book I am working on now, so my editor will want me to 'test' it. Hoping one of you will!
This looks like a good one! Enjoy!
Underground Ham
4 c. diced ham
4 T. butter
1/2 c. onions
1 T. Worcestershire sauce
1 can cream of mushroom soup
1 to 2 c. Velveeta cheese
1 c. milk
4 qt. mashed potatoes
1 pt. sour cream
browned and cumbled bacon
Combine ham, butter, onions, and Worcestershire sauce. Heat until onions are soft. Put in bottom of roaster. In saucepan, heat soup, 1 cup milk, and cheese. Heat until cheese melts. Place over top of ham mixture. Mash potatoes, add sour cream. Put potatoes on top of ham mixture. Top with cumbled bacon. Bake 20 minutes. (Sorry, recipe doesn't say what temp!...I'm guessing 350)

Sounds delicious !! I will let you know how it turns out. I love this Friday recipe posting !! I have tried so many of the Amish recipes from the cookbooks I have found. They are so practical and a lot of them contain ingredients you have at home. But then again, what do we expect from the Amish? Wonderful people, wonderful recipes !!

Reciepe sounds good. But be sure you put CRUMBLED bacon in your book, not cumbled. ok. Love your books and Amish reciepes.

Hi Beth, did you make this ? I agree with a reviewer, that's a lot of potatoes....please let us know if you or any viewers out there make this.....I might try and cut the recipe in half......it does sound really good.....

Of course you know that I printed this for mother to cook. This will be my new comfort recipe. This was absolutely delicious. Creamy potatoes on top of ham and sauce. You know that mother followed the recipe to a "T". I would have just made a pot of potatoes and put on top. She said that it took 4 cups of cut up potatoes to make the 4 quarts. I was not complaining because I love mashed potatoes. I would recommend this to everyone! Just wish I would have taken a dish so I could have brought leftovers for lunch. Patrick won't share his.

Beth I made the Underground Ham yesterday for our Thanksgiving at church, was wonderful, but does make a lot. Looking forward to trying some more recipes, keep them coming.
