Recipe Friday, July 29th Taco Salad

Yet another recipe from an Amish friend in Colorado -  easy, quick and no oven required.

Taco Salad

1 head lettuce (shredded or chopped)       1 can kidney beans
1 1/4 lb. hamburger                                        1 pkg. corn chips
1 c. cheese, shredded                                   1 bottle Thousand Island dressing
1 pkg. taco seasoning                                    
4 c. diced tomatoes

Brown hamburger;add taco seasoning and cheese.  Add to lettuce, tomatoes and beans.  Just before serving, add chips and dressing.

It seems I just have to add my own two cents to every recipe.  To this one, I would add sliced black olives and slices of avocado. You could use pinto or black beans instead of the kidney beans.   It could be served in a tortilla bowl or plated on a bed of lettuce or tortilla chips. 

What do you think?  I think it sounds like just the thing on a HOT summer evening!

    Instead of 1000 dressing - I just use some Taco sauce. Gives it a bit of a kick.
