Beth is on vacation this week, and trying to stay un-plugged, but she has asked Janet, her trusty admin assistant, to post this recipe for her today. 


Lime Cottage Cheese Salad

1 pkg. lime jello                            1 (9 oz.) can crushed pineapple
1 c. boiling water                          2 c. cottage cheese
2 c. miniature marshmallows    1 c. whipping cream, whipped
pinch of salt                                    1/2 cup nuts             

Dissolve jello in boiling water;add marshmallows and let melt.  Stir in salt and pineaple.  Chill until slightly thickened.  Fold in cottage cheese, whipped cream and nuts.   Chill.
