Recipe Friday, August 26th - Breakfast Burritos

Well, Friday came and went this week with no recipe posted.  Sorry about that!  Better late than never?

Here's another recipe I found from my Colorado Amish friend that does not require the oven. 

Breakfast Burritos
1 lb. sausage                                 8 flour tortillas
1 small onion, chopped               1 c. grated cheese
1 green pepper, chopped            sour cream
10 eggs                                            salsa
1/2 c. milk

Brown sausage with chopped onion and pepper.  Beat eggs and milk.  Combine egg mixture with sausage mixture.  Cook in skillet until set.  Eggs should be soft with no liquid remaining.  Heat a tortilla, fill with scoop of egg mixture.  Top with some cheese, sour cream and salsa.  Roll burrito style.  Continue with remaining tortillas.


These are very popular here in Texas.  You can make them with chorizo sausage and jalapeno peppers if you like  the heat.  These could even be served at lunch or supper with a little salad on the side.

    I make these almost every morning for my family !! You can also use fried crispy bacon for the meat. I get up earlier than the rest of the family and I make these and put two in foil and wrap them. They stay warm and are great to eat later !! Of course being from Texas I make my own picante sauce so they have homemade sauce to go with them !!
