Recipe Friday, October 7th - Squash Rolls

Hi everyone!  I have a tiny bit of time this afternoon, so I thought you might like a new Amish Recipe.  For me, October brings thoughts of pumpkins.  This sounds like a yummy way to utilize this healthy veggie.

Squash Rolls
1 Tbsp. yeast                    1/2 c. milk, cooled
1/4 c. warm water            2 eggs
1/2 c. butter                        1/2 c. sugar or 1/4 c. honey
1/2 tsp. salt                        4 1/2 to 5 c. flour
1 c. squash or pumpkin

Disolve yeast in water;mix rest of ingredients together, except flour.  Add flour.  Let rise 1 hour.  Make into rolls.  Bake at 350 degrees for 15 to 20 minutes.

Falling leaves, falling temperatures and hopefully, falling rain in Texas!
Blessings,
Beth

I know what you mean!  These recipes that I post were given to me by Old Order Amish women who got the recipes from their mothers and their grandmothers.  One of the reasons that I post them here is that I always include a few Amish recipes in my Amish novels.  My editor requires that the recipes be tried before I submit them.  With my crazy writing deadlines, it really helps to have others test the recipes, and help me to fill in any missing information.  I always appreciate any feedback and suggestions.

I wonder how canned pumpkin for pies would work?. It might give the rolls some additional good flavors.
